Here’s how I do it:
I get trash bags, poke holes in the bottom and put about 6" of soil in them. I fold them down to the 6" soil level and put two eyes in each one. As the potatoes grow, I cover them with straw. I unfold the bag as the straw level gets taller. When the potatoes reach the top, they are usually done growing. I wait until the tops curl and turn brown. That means the potatoes are ready to harvest. Split open the bag and there are your potatoes, ready to eat and you didn’t have to dig them up.
